Ingredients

  • 2 cups mixed greens
  • 2 tbsp crumbled feta cheese
  • ¼ cup black olives
  • ¼ cup garbanzo beans (chickpeas)
  • 2 tbsp bottled Greek vinaigrette dressing
  • Whole Grain Pita
  • 2 tbsp Hummus

Directions

  • Start by assembling the Greek salad. Combine the mixed greens, crumbled feta cheese, diced tomatoes, black olives, and garbanzo beans (chickpeas) in a large bowl.
  • Drizzle two tablespoons of Greek vinaigrette dressing over the salad and toss gently to coat all ingredients evenly.
  • Cut the whole-grain pita into triangles.
  • Serve the salad with the pita triangles and two tablespoons of hummus on the side for dipping.

Notes

More Protein: For added protein, you can include hard-boiled eggs (for vegetarian), grilled shrimp (for pescatarian), or grilled chicken or steak in the salad.
