Ingredients

  • 8 slices bacon
  • 8 eggs
  • 2 avocados
  • 1 cup sauerkraut

Directions

  • Heat a large pan over medium-low heat. Slowly cook the bacon until crisp, then transfer to a plate. Reserve the bacon fat in the pan for cooking the eggs.
  • Crack the eggs into the same pan and cook to your desired doneness (sunny-side up, over-easy, or scrambled).
  • While the eggs cook, slice the avocado and arrange on plates along with the bacon.
  • Once the eggs are cooked, transfer them to the plates and add the sauerkraut on the side.
  • Serve immediately and enjoy!
