Heat a large pan over medium-low heat. Slowly cook the bacon until crisp, then transfer to a plate. Reserve the bacon fat in the pan for cooking the eggs.
Crack the eggs into the same pan and cook to your desired doneness (sunny-side up, over-easy, or scrambled).
While the eggs cook, slice the avocado and arrange on plates along with the bacon.
Once the eggs are cooked, transfer them to the plates and add the sauerkraut on the side.
Serve immediately and enjoy!
