Cut dates slightly open so you can fit cheese inside.
Add about 1 tablespoon of goat cheese into the center of each date.
Cut bacon slices in half, then wrap one half around each stuffed date. Secure with a toothpick if needed.
Place wrapped dates seam side down on the prepared baking sheet.
Bake for 10-15 minutes or until bacon is crisp and browned, turning halfway through for even cooking.
Remove from the oven and let cool for a few minutes before serving.
Notes
Make-ahead option: Assemble and refrigerate up to 24 hours before baking, or freeze unbaked dates for later.
Cheese swaps: Goat cheese can be replaced with cream cheese, feta, or blue cheese.
Pregnancy safety: Ensure bacon is cooked fully (no pink spots). The cheese is cooked, so any cheese will do.
Add extra flair: Drizzle with honey, balsamic glaze, or sprinkle crushed walnuts on top after baking for extra flavor and texture.
