Beef & Okra Iron Boost Stew

Serving Size

2-4

Ingredients

  • 4 1/4 cups Water
  • 1 lb. Stewing Beef (cubed)
  • 3 Garlic (cloves, minced)
  • 1 Yellow Onion (small, diced)
  • 1/4 cup Cilantro (chopped)
  • 4 cups Okra (trimmed, sliced)
  • 1/2 cup Tomato Paste
  • 2 Tomato (chopped)
  • 1 tsp Sea Salt

Directions

  • Cook the Beef: Heat a splash of water in a large pan over medium-high heat. Add the cubed stewing beef and cook for about 8 minutes, flipping halfway through. Remove the beef and set aside.
  • Cook the Aromatics: In the same pan, add a few more tablespoons of water. Sauté the garlic, onion, and cilantro for about 2 minutes until fragrant.
  • Cook the Okra: Stir in the Lebanese seven spices and okra. Cook for 10 minutes or until tender, adding more water to prevent sticking.
  • Combine Ingredients: Return the beef to the pan and mix in the tomato paste, chopped tomatoes, sea salt, and the remaining water.
  • Simmer: Lower the heat to a simmer, cover with a lid, and cook for about 15 minutes until the desired consistency is reached.
  • Season and Serve: Taste and adjust salt if needed. Divide into bowls and serve warm. Enjoy!
