Heat the Skillet: Place a large skillet over medium heat and add the avocado oil.
Cook the Protein and Vegetables: Add the ground turkey (or beef), chopped onion, diced red bell pepper, and diced yellow bell pepper. Sprinkle in the chili powder, paprika, cumin, and sea salt. Cook for 10–15 minutes, stirring occasionally, until the turkey is fully cooked and the vegetables are softened.
Add the Tomatoes: Pour in the drained diced tomatoes, stir well to combine, and let the flavors meld for 1–2 minutes. Remove the skillet from heat.
Prepare the Cauliflower Rice: If serving raw, divide the cauliflower rice directly into bowls. If cooking, heat a separate skillet over medium heat and sauté the cauliflower rice for 5–7 minutes, stirring occasionally, until tender.
Assemble the Bowls: Spoon the cauliflower rice into serving bowls, then top with the cooked turkey mixture.
Garnish and Serve: Add sliced avocado and chopped cilantro, if using. Enjoy immediately!
