1/2 cup pitted dates (chopped, soaked, and drained)
2 tbsps maple syrup
1/2 cup plain coconut milk (from the carton)
1/3 cup cocoa powder
Directions
Add the 2 avocados, soaked and drained dates, and maple syrup to the bowl of a food processor.
Pulse the mixture to combine until it is smooth and fully blended.
Add the coconut milk and blend again until smooth. If needed, scrape down the sides of the bowl to ensure everything is well combined.
Add the cocoa powder and blend again until the cocoa is incorporated and the pudding is smooth.
Serve the pudding chilled in small bowls. Garnish with fresh berries or toasted coconut, if desired.
