2 cups veggie noodles/spirals (carrot, sweet potato, or zucchini) or 1 small sweet potato to spiral at home
4 - 6 eggs
1-1 tbsp avocado or extra virgin olive oil
1 cup strawberry halves
Optional: spinach
Directions
If using a sweet potato, attach it to a vegetable spiralizer and spiralize into noodles. If no spiralizer is available, cut the sweet potato into thin, fine strips by hand. Divide the veggie noodles into 4 equal piles.
Heat 1 tablespoon of oil in a large skillet over medium-high heat.
Add the veggie noodles to the skillet, keeping them in 2-3 separate piles. Use a spoon to gently hollow out the center of each pile, creating a nest for the egg.
Cook the veggie nests for 3-5 minutes or until the bottom is golden brown and holds its shape.
Carefully flip each veggie nest and cook for another 3-5 minutes until golden brown and crispy, similar to hash browns.
Crack an egg into the hollowed-out center of each nest. Cook for 2-3 minutes or until the egg whites are set and the yolk reaches your desired consistency. If preferred, flip the nest to cook the yolk further.
Remove from the skillet and serve immediately with 1/2 cup of strawberry halves per serving.
