Prepare the Pan: Heat a skillet over medium heat and add avocado oil or ghee.
Create Bell Pepper Rings: Slice the bell pepper into two thick rings, about 1/2 inch wide. Remove any seeds or membranes from the center.
Cook the Eggs: Place the bell pepper rings in the skillet and crack one egg into the center of each ring. Cook until the whites are set and the yolks are cooked to your preference (about 2-3 minutes per side). Flip gently if desired.
Toast the Muffin: Toast the English muffin in a toaster or griddle while cooking eggs.
Add Cheese: Place the cheddar cheese on the toasted muffin while it’s still warm, allowing it to melt slightly.
Assemble and Serve: Plate the eggs in bell pepper rings alongside the cheesy English muffin.
Leftovers: Eat the rest of the bell pepper raw or save it for a snack later.
