Grilled Flank Steak with Sweet Potato Fries

Serving Size

4

Ingredients

  • 4 flank steaks
  • 1 tbsp olive oil
  • 4 sweet potatoes cut into steak fries
  • Salt, to taste
  • Pepper, to taste
  • 1⁄4 tsp garlic powder
  • 2 tbsp olive oil, divided
  • 1 lb. asparagus
  • 1 cup cherry tomatoes
  • 2 cloves garlic minced

Directions

  • Preheat oven to 400°F (200°C).
  • Pat the flank steaks dry with a paper towel. Drizzle with 1 tablespoon of olive oil, then season with salt and pepper to taste. Let rest at room temperature while preparing the vegetables.
  • Cut sweet potatoes into steak fries. In a bowl, toss them with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Spread in an even layer on a baking sheet lined with parchment paper.
  • Trim the asparagus and place it on a separate baking sheet along with cherry tomatoes. Drizzle with 1 tablespoon of olive oil, then add minced garlic, salt, and pepper. Toss to coat evenly.
  • Bake the vegetables: Place the sweet potato fries in the oven and bake for 20-25 minutes, flipping halfway through. After 10 minutes, add the asparagus and cherry tomatoes to the oven and bake for 10-15 minutes until tender.
  • Cook the steak: Heat a grill or skillet over medium-high heat. Cook the flank steaks for 4-5 minutes per side (or until they reach your desired doneness). Let them rest for 5 minutes before slicing against the grain.
  • Plate the sliced steak with the roasted sweet potato fries, asparagus, and cherry tomatoes.

Notes

Alternative Cooking Method: If you don’t have a grill, the steak can be seared in a cast-iron skillet over medium-high heat for 4-5 minutes per side, then rested for juiciness. Add a Sauce: Try serving with a chimichurri, balsamic glaze, or a yogurt-based garlic sauce for extra flavor. Leftovers: Store in an airtight container in the refrigerator for up to 5 days. Reheat in the oven at 350°F for 10-12 minutes or in a skillet over medium heat. Protein content: A 4-ounce flank steak has around 25 g of protein, while a 6-ounce steak has at least 35 grams of protein.
