Prepare the potatoes: Preheat the oven to 400°F (200°C). Toss the diced potatoes with avocado oil, salt, pepper, and dried rosemary. Spread evenly on a baking sheet and roast for 30 minutes, flipping halfway through.
Cook the burger: If using raw turkey burgers, cook on a grill or skillet over medium heat for 4–5 minutes per side or until the internal temperature reaches 165°F (74°C). If pre-cooked, reheat according to package instructions.
Caramelize the onions: In a skillet over medium heat, cook the sliced onions with a drizzle of oil. Stir frequently until soft and golden brown.
Assemble the burger: Top the cooked turkey burger with caramelized onions and feta cheese crumbles.
Make the salad: In a bowl, combine arugula, walnuts, and 2 tablespoons of salad dressing. Toss lightly.
Serve: Plate the burger with roasted potatoes, salad, and a whole peach on the side.
