Combine ground turkey, chopped onion, red bell pepper, oats, Worcestershire sauce, egg white, pepper, oregano, thyme, ketchup, and mustard in a bowl. Mix well until everything is evenly combined.
Shape the mixture into small meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
Bake for 15 minutes or until the meatballs are fully cooked and golden brown.
Choose your preferred cooking method for the green beans: To steam: Place the green beans in a steamer basket over boiling water and steam for 4-5 minutes until tender but crisp. To sauté: Heat a small amount of olive oil in a skillet over medium heat. Add the green beans and cook for 5-7 minutes, stirring occasionally until tender. To bake: Toss green beans with olive oil and season with salt and pepper. Bake at 400°F for 12-15 minutes until tender and slightly crispy.
Add fresh herbs or seasonings to taste (such as garlic, lemon zest, or red pepper flakes) for extra flavor.
Serve the meatballs on top of a bed of 2 cups spring mix.
Add 1 cup of cooked green beans on the side.
