Nourishing Lentil & Kale Comfort Soup

Serving Size

6

Ingredients

  • 1 tsp turmeric
  • 1 tsp thyme
  • 1 tsp salt
  • 1 tsp pepper
  • Optional: 3 scoops collagen peptide powder (adds extra protein and the amino acid glycine; omit if vegetarian)
  • 32 oz. or 4 cups vegetable broth
  • 1 cup dry whole green lentils
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup chopped onion
  • 1 tbsp minced garlic
  • 3 large handfuls kale
  • 1 cup sliced white mushrooms
  • 1 tsp cumin

Directions

  • Sauté vegetables: Heat a drizzle of extra virgin olive oil in a large stockpot over medium heat. Add the celery, carrots, and onion. Sauté for 3-4 minutes, stirring occasionally.
  • Add seasonings and garlic: Stir in the garlic, cumin, thyme, turmeric, salt, and pepper, and continue to sauté for 1-2 minutes until the vegetables are slightly tender.
  • Cook lentils: Add the dry lentils and vegetable broth to the pot. If using, add the collagen peptide powder and stir to combine. Increase the heat to high and bring the soup to a boil.
  • Simmer: Reduce the heat to low, cover the pot, and let it simmer for 35-40 minutes or until the lentils are tender.
  • Add mushrooms and kale: Stir in the mushrooms and kale. Let them cook for 3-5 minutes until they are softened and tender.
  • Serve: Adjust seasoning to taste and serve hot.
  • Instant Pot Instructions:
  • Follow Steps 1 and 2 from above using the sauté function on your Instant Pot.
  • Add the lentils and vegetable broth. Set the Instant Pot to the soup/broth setting for 10 minutes. Place the lid in the “sealing” position.
  • Vent steam, then carefully open the lid. Switch the pot back to sauté mode, add the mushrooms and kale, and stir until tender (3-5 minutes).

Notes

Texture Tip: For a creamier soup, blend a portion with an immersion blender before adding the kale and mushrooms. Extra Protein: Consider adding diced chicken breast when simmering the lentils for a non-vegetarian version. Spice Adjustment: Adjust cumin, turmeric, and pepper to taste for a more customized flavor. Time-Saving Tip: Use pre-chopped vegetables or frozen kale to cut down on prep time.
