2-3 chicken sausage links, sliced into rounds (unless vegetarian)
2 cups broccoli florets, washed and chopped
2 tablespoon butter (for mac and cheese)
1 tbsp olive oil (for broccoli)
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
½ teaspoon garlic powder (or seasoning of choice)
½ lemon, juiced
Directions
Bring a pot of salted water to a boil and cook the mac and cheese according to the package instructions. Once done, drain and set aside.
While the pasta is cooking, heat olive oil in a large pan over medium heat. Add the sliced chicken sausage and sauté for 3-4 minutes, until browned.
Add the chopped broccoli to the pan with the chicken sausage. Stir well and season with salt, black pepper, garlic powder, and a squeeze of fresh lemon juice. Cover and cook for 6-8 minutes, stirring occasionally, until the broccoli is tender.
Either mix the cooked mac and cheese with the chicken sausage and broccoli in the pan, stirring until well combined, or serve them separately as pictured.
Notes
Substitutions: Broccoli can be swapped for another vegetable like spinach, peas, or bell peppers. Chicken sausage can be replaced with regular sausage, tofu, or another protein of choice.
Mac and cheese: Protein and fiber content will vary depending on the brand of mac and cheese used. Goodles is a great option, offering 15g of protein and 7g of fiber per cup. It is a good option on its own if you are struggling with nausea.
