Serving Size

2

Ingredients

  • 8 ozs Ground Beef
  • 4 ozs Chicken Liver (finely chopped)
  • ½ Yellow Onion (diced)
  • 1 stalk Celery (chopped)
  • 2 Garlic cloves (2 tbsp minced)
  • 1 tsp Cajun Seasoning & Salt
  • 2 cups Cauliflower Rice
  • 14 1/2 ozs Crushed Tomatoes
  • 2 Red Bell Peppers (diced)
  • 2 Eggs

Directions

  • Cook the Proteins: Heat a large pan or Dutch oven over medium-high heat. Once warm, add the ground beef and chicken liver. Cook, breaking it up with a wooden spoon, until no longer pink. Drain excess drippings if needed.
  • Sauté Vegetables: Add the onion, celery, garlic, Cajun seasoning, and salt. Stir and cook for 5 to 7 minutes until the onions and celery soften.
  • Add Tomatoes & Cauliflower Rice: Pour in the crushed tomatoes and stir to combine. Add the cauliflower rice and stir well. Cook until the cauliflower reaches your desired texture, about 5 to 7 minutes.
  • Prepare Eggs: While the skillet cooks, prepare eggs to your liking (fried, poached, or scrambled) in a separate pan.
  • Assemble & Serve: Divide the cauliflower rice mixture between bowls and top each serving with one egg. Garnish with optional toppings like parsley or cilantro, if desired. Enjoy!

Notes

Leftovers: Refrigerate in an airtight container for up to three days. More flavors/ toppings: Add cayenne pepper or red chili flakes to taste. Top with cilantro or parsley and lime juice Chicken Livers: Freeze your chicken livers for about an hour to make chopping easier, or buy an ancestral ground meat blend with liver in the ground beef. More Veggies: Add mushrooms and/or bell peppers. More carbs: Use cooked rice instead.
