Ingredients

  • For the turkey burgers:
  • 12 oz. ground turkey
  • 1/2 onion, diced
  • 1 dash salt
  • 1 dash pepper
  • For the toppings:
  • 3/4 cup sautéed onions
  • 1.5 tbsp goat cheese
  • For the salad:
  • 9 cups mixed greens (3 cups per serving)
  • 3/4 cup carrot, shredded
  • 3/4 cup jicama, shredded
  • For the dressing:
  • 3/4 tsp apple cider vinegar
  • 1.5 tsp olive oil

Directions

  • Prepare the burgers: In a bowl, combine ground turkey, diced onion, salt, and pepper. Form into 3 equal patties.
  • Cook the burgers: Heat a pan over medium heat or preheat a grill. Cook patties for about 4-5 minutes per side, or until the internal temperature reaches 165°F (75°C).
  • Sauté the onions: In a small pan over medium heat, cook the onions until they become soft and slightly caramelized, about 5-7 minutes.
  • Assemble the burgers: Once the patties are done, top each with sautéed onions and crumbled goat cheese.
  • Make the salad: In a large bowl, combine the mixed greens, shredded carrots, and shredded jicama.
  • Prepare the dressing: In a small bowl, whisk together the apple cider vinegar and olive oil. Drizzle over the salad just before serving.
  • Serve: Plate the turkey burger alongside the fresh salad and enjoy!
