Preheat oven to 375ºF (191ºC). Grease a 9 x 13-inch baking dish with coconut oil.
Whisk together the pumpkin puree, eggs, maple syrup, vanilla extract, baking powder, salt, and milk in a large bowl until smooth.
Stir in the oats and ground flax seed.
Pour the mixture into the greased baking dish and sprinkle the pumpkin seeds on top.
Bake for 40 minutes or until the center is set and edges are slightly golden.
Enjoy!
Notes
Storage: Store covered in the fridge for 4 - 5 days, or freeze in individual portions for easy grab-and-go breakfasts.
Muffins: Divide the batter into a muffin tray instead of a baking pan. Bake at the same temperature listed for 20 to 25 minutes or until muffins are cooked.
More protein: Add a ¼ cup or ½ cup of protein powder, ½ cup of greek yogurt, ½ cup of cottage cheese, increase the number of eggs, sprinkle in hemp or chia seeds, or do a combination of a few of these options, but only one dairy option.
