Quick Korean BBQ-Inspired Beef Skillet

Serving Size

4

Ingredients

  • 1 lb. ground beef
  • 1 medium zucchini or yellow squash, diced
  • ½ cup red onion, thinly sliced
  • ½ cup Primal Kitchen Korean BBQ sauce (or to taste)
  • Optional: 1 cup mushrooms, sliced

Directions

  • Prepare the vegetables: Wash the zucchini (or squash) and mushrooms. Dice the zucchini, thinly slice the red onion, and slice the mushrooms.
  • Cook the beef: In a large skillet over medium heat, cook the ground beef, breaking it apart with a spatula, until browned (about 7 minutes). Drain excess grease if needed.
  • Add the vegetables: Stir in the diced zucchini, sliced red onion, and mushrooms. Cook for another 7 minutes, stirring occasionally, until the vegetables are tender.
  • Incorporate the sauce: Pour the Korean BBQ sauce, stirring to coat the beef and vegetables evenly. Let simmer for 2-3 minutes, allowing flavors to meld.
  • Serve and enjoy! Serve warm as is, over rice or in lettuce wraps.

Notes

Sauce Swap: You can substitute the Korean BBQ sauce with teriyaki sauce, coconut aminos, or another favorite sauce. Serving/GD: This dish pairs well with jasmine rice and cauliflower rice or is wrapped in lettuce cups for a low-carb gestational diabetes-friendly option.
