In a bowl, beat the egg and add the drained canned salmon.
Stir in the Italian bread crumbs, plain Greek yogurt, dijon mustard, lemon juice, onion powder, and garlic powder. Mix lightly until all ingredients are combined.
Scoop about ⅓ cup of the mixture and form it into 6 patties.
Heat 1 tablespoon of olive oil in a large pan (cast iron works great) over medium heat. Once the pan is hot, place the patties in the pan.
Cook for 2-3 minutes on each side, flipping gently, until the patties are golden brown and cooked through (about 5-6 minutes total).
After cooking, top the patties with a squeeze of fresh lemon juice and a dollop of Greek yogurt.
For the Roasted Broccoli:
Preheat your oven to 400°F (200°C).
Wash and dice the broccoli into florets.
Toss the broccoli in 1 tablespoon of olive oil and season with salt and pepper to taste.
Spread the broccoli in a single layer on a baking sheet and roast in the oven for about 30 minutes, checking halfway through, until the broccoli is tender and slightly browned on the edges.
Notes
No Broccoli: Sub with brussel sprouts or asparagus
More carbs: Eat the salmon patty on your favorite bun, or add roasted potatoes!
