Spiced Chicken Naan Pizza

Serving Size

2

Ingredients

  • For Chicken-
  • 1⁄2 lb. chicken breast diced
  • 1⁄2 tsp garam masala
  • 1⁄2 tsp paprika
  • 1⁄2 tsp cayenne pepper
  • 1⁄2 tsp garlic powder
  • 1⁄2 tsp onion powder
  • 1 tsp lemon juiced
  • 2 tsp olive oil
  • 1⁄4 teaspoon salt
  • For Pizza:
  • 2 pieces naan
  • 1⁄4 red onion diced
  • 1⁄4 cup green bell pepper diced
  • 1⁄4 cup red bell pepper diced
  • 1⁄2 cup marinara sauce
  • 1⁄2 cup shredded cheese
  • Optional: 1⁄4 cup cilantro chopped

Directions

  • Combine the diced chicken with garam masala, paprika, cayenne pepper, garlic powder, onion powder, lemon juice, olive oil, and salt in a medium bowl. Toss to coat the chicken evenly with the seasonings.
  • Option 1: Preheat the grill to medium-high heat. Place the chicken pieces on the grill and cook for 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from heat and set aside. Option 2: Preheat the oven to 375°F (190°C). Arrange the seasoned chicken pieces on a baking sheet and bake for 12-15 minutes, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the oven and set aside.
  • Preheat the oven to 400°F (200°C) if it’s not already preheated—line two cookie sheets with parchment paper. Place the naan pieces on the parchment-lined baking sheets, bubbly side up, ensuring they are flat and even.
  • Spread 1/4 cup of marinara sauce evenly over each naan, leaving a small border around the edges. Sprinkle 1/4 cup of shredded cheese over each naan.
  • Distribute the diced red onion, green bell pepper, and red bell pepper evenly over the pizzas. Add the cooked chicken pieces on top of the vegetables. Sprinkle the chopped cilantro evenly over each naan.
  • Transfer the baking sheets to the middle rack of the oven. Bake for 10-12 minutes until the cheese is melted, bubbly, and golden brown, and the naan is crispy around the edges.
  • Remove the pizzas from the oven and allow them to cool for a minute. Slice each naan pizza into quarters and serve immediately.

Notes

Leftovers: Store leftover pizza in an airtight container for up to 3 days. For best results, reheat in the oven. Save time: Use a rotisserie chicken. For nausea: Omit veggies or other ingredients that make you nauseous; just melted cheese and naan might work best! Protein content: ~ 28 g for one naan with chicken
