Basic Shrimp and Broccoli

Ingredients

  • 12 medium-large shrimp
  • 2 tbsp lemon juice
  • 2 tbsp oil
  • Salt & pepper to taste
  • 2 cups fresh broccoli
  • 2 cups shredded carrots
  • 1 cup rice

Directions

  • Cook rice according to package.
  • Saute shrimp in oil over medium heat until pink and cooked through.
  • Cook broccoli and carrots as desired (steam, bake, saute).
  • Add all ingredients together and squeeze lemon juice before serving.

Notes

Leftovers: Store in an airtight container for up to 3 days No carrots: Just include broccoli or add cabbage. More Protein: Six large shrimp contain around 25 g of protein. You can easily increase the amount by using quinoa or farro as the grain or eating more than 6 shrimp.
