Saute shrimp in oil over medium heat until pink and cooked through.
Cook broccoli and carrots as desired (steam, bake, saute).
Add all ingredients together and squeeze lemon juice before serving.
Notes
Leftovers: Store in an airtight container for up to 3 days
No carrots: Just include broccoli or add cabbage.
More Protein: Six large shrimp contain around 25 g of protein. You can easily increase the amount by using quinoa or farro as the grain or eating more than 6 shrimp.
