Ingredients

  • 2 cup rolled oats
  • 1 cup Medjool dates
  • 1 cup almond butter
  • ½ cup maple syrup
  • 2 tsp vanilla extract
  • ⅛ tsp sea salt
  • ½ cup dark chocolate chips

Directions

  • Blend the rolled oats in a food processor or blender until they reach a flour-like consistency.
  • Add the dates, almond butter, maple syrup, vanilla extract, and sea salt. Blend until a thick dough forms.
  • Stir in the chocolate chips.
  • Scoop the mixture into tablespoon-sized portions and roll into balls.
  • Sprinkle lightly with sea salt, if desired.

  • Refrigerate for at least 30 minutes before serving to firm up.

Notes

Storage: Store in an airtight container in the refrigerator or countertop for 5 days. No Almond Butter: Use peanut butter! Nut-free: Use sunflower seed butter. Add-in protein: Plant-based, whey protein or collagen powder would work well, depending on your dietary preference. ¼ cup chia seeds add in more protein and fiber as well.
