Vegetarian Option: 1 (14-16 oz) block of extra-firm tofu, pressed and cut into cubes
1 cup diced bell pepper
1 cup broccoli
3 frozen garlic cubes
3/4 cup cashews
1.5 tbsp flour
2 tbsp oil
Optional: brown or white rice
Sauce:
2 tsp sesame oil
1 tbsp honey
1 tbsp rice wine vinegar
1 tbsp coconut aminos or soy sauce
1/2 tsp ginger paste
1/2 tsp crunchy chili onion seasoning (add however much spice you like!)
Directions
In a small bowl, whisk together the sesame oil, honey, rice wine vinegar, coconut aminos (or soy sauce), ginger paste, and crunchy chili onion seasoning. Set aside.
In a medium bowl, toss the chicken pieces or tofu cubes with flour until lightly coated.
Heat 1 tbsp of oil in a large skillet over medium-high heat. Add the chicken and cook for 10-15 minutes, stirring occasionally, until golden brown and cooked through. Remove from the pan and set aside. If using tofu, cook for 5-8 minutes until golden brown. Remove from the pan and set aside.
Return the cooked chicken to the pan and add the cashews. Pour in the sauce and stir well to coat everything evenly. Cook for an additional 1-2 minutes until heated through.
Remove from heat and serve immediately.
